We actually got a little creative this weekend and made some detox friendly cookies! Dr. Josh just can't shake the sweet tooth so we made pumpkin, lemon and vanilla shortbread cookies using coconut flour. These were eggless, gluten free, dairy free cookies, so they were dry but tasted pretty good. They aren't that pretty either, but they seem to be calming Dr. Josh's sweet tooth.
So most of the weekend was salads and leftovers from the week, but we did make a vegetable soup with lentils. It was very filling and hit the spot…plus as an added bonus there are lots of leftovers for the week.
Most of the tiredness and the other detox side effects have passed. We are ready for this next week and excited to start feeling more energized and toxin free!
